Dried porcini mushrooms are a great store cupboard ingredient. To use just soak for 20 minutes in warm water or milk, drain, and use like an ordinary mushroom in risottos, stroganoffs, stews or stir-fries. The french name for porcini is cepes or ceps; the English name is penny bun, and the Latin is boletus edulis.
