Wheat and gluten free and made from 100% buckwheat which has a high protein and fibre content and high levels of minerals such as magnesium. Suitable for wheat free diets as it is not a type of wheat but a seed of a broad leaf plant related to the rhubarb family. Buckwheat is also a low glycemic index food and ideal for the GI diet.

Organic buckwheat flour, water.
Directions
Remove paper ties. Bring water to a rolling boil and slowly submerge noodles. Bring back to the boil then reduce to medium heat. Cook for 5 – 6 minutes. Do not overcook! Drain and rinse well with cold water. Add to your ingredients or sauce.
